Gluten Free
Derived from the Latin for "glue," gluten is a protein mixture found in grass-related grains. One of the proteins, glutenin, gives kneaded bread dough its elasticity.
However, more and more people have discovered minor to severe allergies to other proteins in the gluten mix. Flourless chocolate torte
This very rich, dense and truffle-like torte is little more than one inch thick and makes for a very elegant dessert. My chocoholic husband, who is not allergic to wheat but takes his chocolate very seriously, has requested this cake on his birthday. Inside the flour has been replaced by crushed almonds and the finished cake is encircled by a halo of chopped almonds. Available in 9-inch rounds only. Serves 12 or more persons. $25.

Peanut Butter Jobbies (PBJs)
These bite size cookies have a taste and texture much like the inside of a Reese's peanut butter cup. The name came from a relative who got some of these as part of a holiday gift package and suggested I add "those peanut butter jobbies" to my menu. So here they are!

Phil's Cookie
A super PBJ, with the addition of oatmeal and a Hershey's Kiss on top. The cookie is named for a friend who loved my Chocolate Chip Oatmeal cookies but discovered he had a wheat gluten intolerance. So to the kitchen I merrily tripped to make Phil his own special treat. Note to those with gluten sensitivities, Phil's Cookie does contain oatmeal, but no wheat.
