Other Cookies: Peanut Butter Cookies
Flipper Fanny's offers two variations: Peanut Butter Jobbies (PB and Js) and Phil's Cookie.
Peanut Butter Jobbies (PBJs)
With a taste and texture much like the inside of a Reese's peanut butter cup, I've had cheers and applause when I've walked into meetings and parties with trays of these bite-sized goodies. I originally made them as part of a holiday gift package for family and friends. Everyone loved them and requested more. One family member wrote a thank you note saying I "ought to sell those peanut butter jobbies." Thus the name.
An additional bonus: since there's no flour in the recipe PBJs are perfect for those on wheat gluten-free diets.

Phil's Cookie
A Super PBJ, with the addition of oatmeal and a Hershey's Kiss on top. The cookie is named for a friend who loved my Chocolate chip Oatmeal cookies but discovered he had a wheat gluten intolerance. So to the kitchen I merrily tripped to make Phil his own special treat. Note to those with gluten allergies: Phil's Cookie does contain oatmeal, which I'm told has a kind of gluten, though different from that found in wheat.
